Summer Pudding

This refreshing dessert, or pudding, as the English refer to it, is one of my all time favorites. It's pretty easy to make and should be made ahead of time, so it's just the dessert for those summer dinners on the porch.

4 cups of summer fruits (blackberries, strawberries, raspberries, blue berries, etc) washed and hulled.

1/2 cup sugar.
8 slices of white bread, crusts removed.

Place berries, except strawberries, into a large pan with 1/2 cup of water and heat gently for about 5 minutes. Add strawberries and remove from heat. Add sugar and stir gently. Cool Line a medium sized mixing bowl with the bread. Overlap the slices to make sure the bread fits snuggly, no gaps. Do not flatten the bread. Add the berries and the juice. Cover the top with bread slices, then cover tightly with plastic wrap. Place a small plate which fits inside the bowl on top of the plastic wrap, then weigh it down with something heavy, such as a can of food. Refrigerate overnight, then carefully turn out the mold onto a serving plate. Serve with whipped cream. Enjoy!
